Dungeness crab is our primary product. Our season begins
in San Francisco on November 15 and accelerates December first with the
coast-wide opening. The majority of crab is harvested and processed in
the first six weeks. The season continues until late summer, affording
us the opportunity to supply fresh products for most of the year. Since
we handle every aspect of production from the boat to the customer's door,
we have a firm handle on quality control.

Albacore tuna has been an important fishery for us since
1998. That was the year when the American canneries were unable to buy
from the domestic fleet. A marketing crisis occurred. Vessels full of
fish were in port from San Diego to Washington, but unable to sell their
catch. Upon learning of potential interest for our fish in Spain, Bill
Carvalho spent many nights telephoning and faxing potential buyers in
Spain. After two weeks, two major canneries placed sizable orders and
Carvalho Fisheries became the primary buyer of the fleet's fish for the
rest of the season. Since then, the demand in Spain for our high quality,
troll-caught Albacore has increased. We now export millions of pounds
annually. Many fishermen have equipped their vessels with high capacity
blast freezers. They have developed techniques of spiking, bleading and
freezing their fish to make them acceptable to the most demanding customer
base, the Japanese. The sashimi-grade fish is outstanding in mild flavor,
clear-white flesh and firm texture.

It is awe inspiring to contemplate the profound wisdom in
the life cycle of the King Salmon. After leaving their natal streams,
they spend two to three years migrating, feeding on anchovies, sardines,
smelt and other bait fish. In the process, they collect within their bodies,
all the minerals and nutrients available in the ocean and deposit them
back into their original streams as they decay after spawning. These nutrients
enrich the watersheds and contribute to the molecular diversity of the
rich coastal soils.
What does this have to do with Carvalho Fisheries sale of
Wild King Salmon? All of us can also benefit from this nutrient rich fish
through consumption. It is a source of great enrichment to the physical
well-being of our customers. We believe it should be part of everyone's
diet.
Carvalho Fisheries has an extensive procurement range for
Wild King Salmon. Our season begins in late March along the Oregon coast.
We follow the boats down into California during the summer months. The
Oregon Season continues all the way through November.
